In a pan, melt a cup of cream and 2/3 cup of dark chocolate morsels over low heat. Stir until smooth and creamy. Add a teaspoon of vanilla essence, half a teaspoon peppermint flavoring. and 1/4 tsp of fine salt. Set aside.
Using an electric mixer, beat 3/4 cup cream until stiff. Add the chocolate mixture and beat until peaks form.
Spoon into individual cups and garnish with fresh mint leaves.
Add wedges of fruit in your cold drinking water. Use a medley of citrus fruits like oranges, lemons and dalandan or use a combination of melons and watermelons. The fruits do not only add color, they also infuse the water with vitamins and a healthy sweetness.
