- In a pan, melt a cup of cream and 2/3 cup of dark chocolate morsels over low heat. Stir until smooth and creamy. Add a teaspoon of vanilla essence, half a teaspoon peppermint flavoring. and 1/4 tsp of fine salt. Set aside.
- Using an electric mixer, beat 3/4 cup cream until stiff. Add the chocolate mixture and beat until peaks form.
- Spoon into individual cups and garnish with fresh mint leaves.
- Chill until ready to serve.
